With our current pandemic situation, I'm pretty much-avoiding restaurants.  So, I have been spending much more time in the kitchen.

Most of us have a go-to favorite meal or dinner.  My husband, Jeff, can eat pizza every day.  My favorite?  Tacos.  In fact, I love tacos so much, I've had to alter the style of eating them.  Salads, no shell, with a softshell, hardshell, etc.

I absolutely LOVE a delicious taco and can enjoy a taco salad every day.

My construction a delicious taco is pretty basic.

I have learned that the ingredients are important.  And, because I am an EXTREMELY picky eater, I start with ground beef.  I brown it well and drain the excess grease.  I'll then add any type of taco seasoning packet and spices.  (I prefer Taco Bell, as I'm a former employee.  True story)  Then add diced tomatoes (Only if you like them) and anything you'd like to spice up your beef with.  Onions, garlic, and peppers are great.  Let the mixture simmer on low for 10-15 minutes.

The next steps in the process are totally your preference.  I love flour tortillas or softshells, which are easy to warm on the stove-top or in the microwave.

What will go in the shell?  Lettuce, tomatoes, and cheese are popular choices.  And of course, some sort of sauce.  There are many different types and brands of taco sauces and salsas.  You choose!  It's your taco!

Admittedly, due to my pickiness, I've started adding other ingredients.  I like the sweetness combined with the spicy.  So, my latest taco salad featured pineapple, cucumber, and jalapenos.
